Did you know Silver Needle Tea (also known as White Hair Silver Needle and Bai Hao Yin Zhen 白毫银针) is only harvested two days of the year and contains only the buds and youngest leaves of the Camellia Sinensis plant?
The most expensive and prized of all the white teas, harvesting normally occurs on a sunny morning (so that all morning dew has evaporated) around March to April which is when the buds will flush.
There are two main types of Silver Needle White Tea, which are based on their region of origin - Zhenghe and Fujian, with ours being from the latter, A grade, and known to be lighter with less oxidation.
